Waffle croissants with a note of spice

Making waffle cones yourself offers the chance to flavor the dough according to your own ideas.

In this case Arabic coffee spice was used.

Ingredients for about 15 large or 20 small waffles:

90g melted butter
1 egg
1/4 teaspoon [restrict]Arabic coffee spice
100 grams of sugar
125 ml water
175 grams of flour

Please do not use milk – otherwise the waffles will not be as crispy.


Beat together the butter, sugar, and egg and spices until smooth. Then alternately add one part water and one part flour and mix everything to form a smooth dough.

The waffles will be best if the batter is allowed to rest in the fridge for a few hours. In the CHEFS’ CLASS we prepare it the night before and use it the next day.


Preheat waffle iron for cone waffles. Pour a small amount of batter onto the iron and press the heating plates together firmly. After 2-3 minutes check for the first time whether the color is correct. The waffle is ready when it is browned to the desired level and cooked through.

Shape the hot waffle :

A waffle horn is usually used, as can be seen in this example. You can also put the hot waffles over a glass to create a bowl. Placed over a rolling pin, you get semi-circular shells, similar to taco shells.


The waffle must be formed hot. When it cools down, it can no longer be bent and it breaks. They will keep for a few days in an airtight container.
