Use of leftovers in mussels

Food waste is one of the major problems of our time. If you have some leftover mussels, you can use the leftovers to make a number of different dishes.

Store leftovers :

  • Remove the mussels from the shells
  • Pass the stock through a fine sieve with the remaining mussel meat and vegetables
  • store separately in airtight packaging or freeze


  • for the broth:
    • Serve as is as a soup
    • For refining or as a base for sauces, for example for pasta or rice
  • For the mussel meat with the vegetables
    • as part of rice or pasta dishes
    • As an ingredient in fish soup or in mussel stock
    • slightly warmed served on a salad
