
Waxy eggs are a popular topping for salads and other dishes. The deep-fried variant gives the soft texture an extra crunchy flavor.
Material needed :
- Pot with at least 6 cm high oil for frying, alternatively a deep fryer
- 3 bowls for breading
- Slotted spoon or metal strainer
Ingredients:
- soft or waxy boiled eggs,
in this case size M, cooked 5 minutes - flour or potato starch
- Whisked Egg
- breadcrumbs or panko
Action:
- Heat the frying fat to 175°C
- Dip the eggs in flour, then dip in the beaten egg and finally coat in breadcrumbs
–> there must be no gaps in the breading, the casing must close tightly - Fry eggs in deep fat
- after exactly 5 minutes, the eggs were brown and crispy on the outside and not yet cooked on the inside
