Steamed sole roses in white wine sauce

Sole roses are a popular holiday appetizer. They are easy to prepare and only take a few minutes to complete.

Required material:

  • Muffin Mold
  • steamer
  • Alternatively: Steam insert and silicone moulds


  • Sole fillets (as a starter 1 fillet/person, otherwise 2)
  • white wine sauce
  • whipped cream


  • Roll up the sole fillets so that they look like rose petals
  • Place in (buttered) muffin cases
  • Sprinkle with some salt
  • Steam below boiling point for about 5-8 minutes with the lid closed
  • Heat the white wine sauce, fold in some whipped cream
  • Place the sole roses in a deep plate and pour the sauce over them
  • Optionally garnish, e.g. with steamed glasswort (salicorne)
