
Sole roses are a popular holiday appetizer. They are easy to prepare and only take a few minutes to complete.
Required material:
- Muffin Mold
- steamer
- Alternatively: Steam insert and silicone moulds
Ingredients:
- Sole fillets (as a starter 1 fillet/person, otherwise 2)
- white wine sauce
- whipped cream
Action:
- Roll up the sole fillets so that they look like rose petals
- Place in (buttered) muffin cases
- Sprinkle with some salt
- Steam below boiling point for about 5-8 minutes with the lid closed
- Heat the white wine sauce, fold in some whipped cream
- Place the sole roses in a deep plate and pour the sauce over them
- Optionally garnish, e.g. with steamed glasswort (salicorne)
