Parry the fillet of beef

The whole fillet of beef offers so many different culinary possibilities that it’s almost a shame to only buy one steak at a time.

If storage is sufficient and a vacuum device is available, simply buy a whole fillet and cut it up.

This video first shows how to remove the tendon that runs lengthwise over the entire strand.

Material needed :

  • Adequate cutting board
  • sharp knife with a not too long blade

For this purpose, the knife is first guided under one end of the string and pulled outwards. Now hold this end with one hand and guide the knife under the string in the other direction. Make sure the blade is pointing up at a shallow angle to leave as little meat on the tendon as possible.
