
The rocket salad, also known as rocket, is also ideal as a steamed meal component. Its intense spiciness is somewhat lost and is combined with the sweetness of sweaty shallots. With this cooking method, this makes it a serious competitor to the otherwise familiar leaf spinach.
Components required :
- mashed potatoes
- Soft or waxy boiled chicken eggs
- rocket
- shallot
- butter
Action:
- Keep mashed potatoes warm or heat up and season with truffle sauce
- Heat deep fat fryer or pot to 175°C
- Melt butter in saucepan over 2/3 heat
- Cut the shallot into brunoises and sweat in the hot butter until translucent
- Wash rocket and add to shallots while dripping
- Close the pot with the lid and let the rocket disintegrate in its own steam
- Season with salt and nutmeg
- Bread and fry eggs as described here
serving:
- Pipe the truffle puree into a ring using a piping bag
- Serve steamed rocket
- Place the egg on top and serve either whole or already sliced
