Fried egg on sautéed rocket and truffle mashed potatoes

The rocket salad, also known as rocket, is also ideal as a steamed meal component. Its intense spiciness is somewhat lost and is combined with the sweetness of sweaty shallots. With this cooking method, this makes it a serious competitor to the otherwise familiar leaf spinach.

Action:

  • Keep mashed potatoes warm or heat up and season with truffle sauce
  • Heat deep fat fryer or pot to 175°C
  • Melt butter in saucepan over 2/3 heat
  • Cut the shallot into brunoises and sweat in the hot butter until translucent
  • Wash rocket and add to shallots while dripping
  • Close the pot with the lid and let the rocket disintegrate in its own steam
  • Season with salt and nutmeg
  • Bread and fry eggs as described here

serving:

  • Pipe the truffle puree into a ring using a piping bag
  • Serve steamed rocket
  • Place the egg on top and serve either whole or already sliced
