
Particularly crispy French fries are the result of a combination of several work steps.
Material needed :
- Deep pot or deep fryer with basket
- Sufficient heat-resistant oil
- slotted spoon
- paper towels
- Big bowl
- chef’s knife
- cutting board
Ingredients :
- Big waxy potatoes
- salt
- Optional: other spices such as paprika, cayenne, curry, cumin etc.
Action:
- Depending on your preference, peel or not peel the potato
- Cut the potatoes into batonnets (sticks with an edge length of approx. 8 mm).
- Place potato sticks in bowl of cold water
- Soak in cold water for about 1.5 hours
- Pour oil into the pot, it must not be more than half full (follow the operating instructions for deep fryers)
- Heat oil to 150°C
- Drain the potato sticks in a colander, drain well on paper towels and pat dry
- Put the potato sticks in batches in the hot oil
- Fry for 4-6 minutes
- Remove with a slotted spoon and place on paper towels to drain
- Do the same with the other portions
–> From here you can either freeze the potato sticks and fry them à la minute or process them immediately - Further processing: Heat the oil to 180°C
- Fry the potato sticks in batches until golden
- Remove with the slotted spoon
- Drain well in a colander and place in a large bowl
- salt and possibly Spice up
Serve :
- Fried foods need dry environment to stay crispy. Therefore, the finished French fries are served either in a shallow bowl or in appropriate baskets
