Flavored oil with dill

Flavored oils are suitable as a garnish (e.g. drops) or as an ingredient for sophisticated dishes. Dill is a good partner for fish dishes, but also, for example, for cucumber salad or cucumber preparations.

Ingredients :

  • 1 l neutral oil (e.g. cold-pressed rapeseed oil)
  • 150 grams of dill
  • 10 grams of sea salt

Procedure :

  • Blend the oil, dill and salt in a stand mixer on high for 30 seconds
  • Vacuum in bags
  • Leave in the fridge for 1 week
  • Pass through a fine sieve or use with dill

Alternative procedure :

  • Boil all the ingredients in the vacuum cooking mixer at 75°C for 1 hour. Due to the negative pressure, the oil boils at around 50 °C
