For the Osso Buco

  • 2 veal knuckles (sawn into approx. 5cm thick slices)
  • 5 pieces of carrots
  • 5 sticks of celery
  • 400 g brown mushrooms
  • 2 cans of peeled tomatoes (each can approx. 400 g)
  • 250 ml strong dry white wine (e.g. Chardonnay)
