Brussels sprouts completion

If Brussels sprouts are to be finished à la crème, you take them out of the mise en place

  • the blanched Brussels sprouts (as a side dish approx. 100g)
  • the bacon cream sauce

Both are heated together and can be served when ready.

In banquets or communal catering, both are usually regenerated together in GN containers in the combi-steamer.
